Here I'll be sharing some of my favorite recipes. You'll find a little bit of everything from sinfully delicious deserts to good ol' down home cooking.

 

Chicken Linguini

What you'll need:

4 Boneless Skinless Chicken Breast

1 Green Bell Pepper

1 Red Bell Pepper

1 Lg. Yellow Onion

2 pkg. Dry Onion Soup Mix

Extra Virgin Olive Oil

Salt

Pepper

Garlic Powder

1 pkg. dry linguini

 

Directions:

1. Cut chicken breast into bite sized chunks.

2. Chop raw vegetable into slices about 1/4" thick.

3. Coat large frying pan with olive oil (barely cover bottom of pan)

4. Toss in chicken and raw vegetables, then season with salt, pepper, and garlic powder to taste.

5. Cook until vegetables are tender and chicken pieces are cooked through. Stir as needed. If mixture seems to be sticking, add a bit more olive oil.

6. Sprinkle both packages of dry onion soup mix on chicken and vegetable mixture then add about 1/2 cup water. You want the dry soup mix and water to create a thick sauce. If it seems too thick, just add a bit more water. Let this simmer for about 10 - 15 minutes.

7. Put pkg. dry linguini in a pot of salted boiling water with 1 tsp olive oil. Boil 8 to 10 minutes or until fork tender. Drain.

8. Add chicken/vegetable mixture to pasta and stir. (More water can be added to thin sauce if needed)

9. Enjoy!

 

 

Brownie Delight

What you'll need:

1 box Brownie Mix

1 - small can of sweetened condensed milk

1- 8oz pkg. softened cream cheese (softened)

1 - small pkg. instant chocolate pudding

3/4 cup powdered sugar

1 small container frozen whipped topping (thawed)

 

Directions:

 

1. Mix and bake brownie mix according to directions on package. Remove from oven and poke holes in the brownies with the end of a wooden spoon. Pour over the sweetened condensed milk, spreading it evenly. Set aside and let cool. (A 9x13 baking pan works well)

 

2. While brownies are cooling, cream together powdered sugar and softened cream cheese. Set aside.

 

3. Mix instant pudding together according to directions for pie filling. (This keeps the pudding from being too thin.) Set aside.

 

4. Now you're ready to put your desert together. Spread the cream cheese mixture over the top of cooled brownies. Next, spread the pudding mix over the cream cheese layer. Finally, cover with thawed whipped topping and refrigerate.

 

This is best if refrigerated for several hours to let the flavors combine, then enjoy!
