Chicken Linguini
What you'll need:
4
Boneless Skinless Chicken Breast
1
Green Bell Pepper
1
Red Bell Pepper
1
Lg. Yellow Onion
2
pkg. Dry Onion Soup Mix
Extra Virgin Olive Oil
Salt
Pepper
Garlic Powder
1
pkg. dry linguini
Directions:
1. Cut chicken breast into bite sized chunks.
2. Chop raw vegetable into slices about 1/4" thick.
3.
Coat
large frying pan with olive oil (barely cover bottom
of pan)
4. Toss in chicken and raw vegetables, then season
with salt, pepper, and garlic powder to taste.
5. Cook until vegetables are tender and chicken
pieces are cooked through. Stir as needed. If
mixture seems to be sticking, add a bit more olive
oil.
6. Sprinkle both packages of dry onion soup mix on
chicken and vegetable mixture then add about 1/2 cup
water. You want the dry soup mix and water to create
a thick sauce. If it seems too thick, just add a bit
more water. Let this simmer for about 10 - 15
minutes.
7. Put pkg. dry linguini in a pot of salted boiling
water with 1 tsp olive oil. Boil 8 to 10 minutes or
until fork tender. Drain.
8. Add chicken/vegetable mixture to pasta and stir.
(More water can be added to thin sauce if needed)
9. Enjoy!
